Keto bread recipes are low-carb bread recipes made with keto flour, mostly gluten-free and often using eggs. Keto bread recipes provide an alternative to wheat bread and its high level of carbs.

Keto bread is a good alternative for bread-lovers in their keto diet journey.

Keto baking is a new way of baking that combines high-fiber, low-carb flour, eggs, dairy-free milk, and sometimes cream cheese, mozzarella cheese, or vital wheat gluten.

Keto Bread Dough

There are three types of keto bread dough that you can use to bake keto bread, depending on what you expect.

  • Egg-based keto bread dough – the most classic way of baking keto bread is to combine many eggs with one, or a combo of the most popular keto flours, almond flour, or coconut flour. Since these keto bread recipes use several egg yolks, they often have a strong eggy taste and cakey texture. In fact, the more egg yolks you add to bread, the stronger the eggy taste will be. To decrease the number of egg yolks in a keto bread recipe, you can add more olive oil. One tablespoon of olive oil can replace one egg yolk.
  • Egg-free keto bread dough – this is a new way of baking keto bread. These keto bread recipes have no eggy taste but a normal bread-like flavor. It consists of a meticulous combination of different low-carb flours, including almond flour, coconut flour, flaxseed meal, and a decent amount of whole psyllium husk or psyllium husk powder to replace eggs.
  • Cheese-based keto bread dough – also known as fathead dough. The purpose of this dough is to create extremely low-carb bread with a chewy texture. It creates delicious keto rolls, bagels, buns, or pizza bases, but it is not used to make keto bread loaves. A Fathead dough combines mozzarella cheese with cream cheese, eggs, almond flour, or coconut flour, and baking powder.
  • Cream cheese egg bread dough – also known as cloud bread or oopsie bread. The purpose of this dough is to make very low-carb burger buns. These buns are light and fluffy. They do not quite taste like normal bread, but they are convenient to make a keto burger with very few carbs. Cloud bread batter combines whipped egg whites, cream cheese, cream of tartar, and baking powder. Cloud bread dough is also used as Danish pastry dough in some keto baking recipes.

There is a variety of keto bread recipes that are safe to enjoy on a keto diet. The most popular keto bread recipe types are:

Keto bread loaves

A keto bread loaf looks like a normal bread loaf, with a crusty crust, soft, airy crumb, and a rectangle shape.

Keto bread loaves are always baked in a loaf pan and can be sliced perfectly like wheat bread, just without the carbs.

They make delicious keto sandwiches, keto toasts, or keto French toasts. However, keto bread loaves have a heavier dense texture compared to wheat flour bread.

Also, the classic method of baking keto bread loaves often uses many eggs to bind the keto flours together, resulting in a strong eggy taste.

That is why some recipes use psyllium husk powder or whole psyllium husk as an egg replacer.

Therefore, egg-free keto bread loaves are very trendy since they avoid the eggy taste and taste just like your normal bread. Below is the almond flour bread recipe without eggs.

Keto bread rolls

Keto bread rolls are mostly used as a side dish or to make keto burger buns. They are small balls of bread baked on a baking sheet and can be made from any keto dough: classic, egg-free dough, or fathead dough.

Keto buns

A keto bun refers to a flat round bread baked on a baking sheet and used as a carrier of food in burgers or sandwiches.

Keto buns can be made with any keto dough like fathead dough, cloud bread dough, or classic dough. However, for an egg-free keto bun recipe, try my keto burger buns recipe.

Microwave keto bread

A 90-second keto bread or microwave bread is a quick bread recipe baked in the microwave.

It usually uses 3 or 4 simple ingredients as a base: one egg with three tablespoons of almond flour, melted butter, and baking powder to create a single-serve keto bread.

Low-Carb Flours

There is no secret, to make keto bread, you cannot use wheat flour, and you must use low-carb flours instead. Low-carb flours, meals, or grounds are mostly made of nuts or seeds.

They contain an incredibly low amount of net carbs.

Therefore, low-carb flours generally contain a high amount of fiber, fat, and protein. As a result, keto baking is quite different from traditional baking.

It requires different techniques and different ratios of wet to dry ingredients.

The table below lists the most common low-carb flours for baking bread (data from nutrition data). As an element of comparison, wheat flour contains 73 grams of net carbs per 100g and only 3 grams of fibers.

What are the best keto flours for baking?

  • Almond flour – there is a large variety of almond flour on the market. To avoid grainy, gritty keto bread, always choose ultra-fine almond flour with a golden color. You can try my almond flour bread recipe for easy keto bread and make yourself a delicious grilled cheese sandwich!
  • Coconut flour – often used in combination with other keto flours to add bulk and bread flavor to keto bread. In fact, coconut flour contains a lot of fiber – 37g per 100 grams. As a result, it absorbs a lot of moisture in keto bread recipes and can dry your bread dough quickly. That is why coconut flour bread loaves are often made with a combination of coconut flour and almond flour. Try my egg-free keto bread loaf with coconut flour. It tastes like regular bread with delicious toasted sesame seeds on top.
  • Psyllium husk – this is pure fiber and acts as a binder in keto bread recipes. Since keto baking does not use starch or gluten, psyllium husk powder or whole psyllium husk is often used to add chewiness to the bread crumb and bind ingredients with minimal eggs. However, it should be noted that psyllium husk powder is often confused with the popular dietary supplement called Metamucil. That is why you must choose a psyllium husk powder suitable for baking. Otherwise, the whole psyllium husk is the best replacement for psyllium powder. In fact, the whole psyllium husk absorbs moisture even better and creates the best keto bread texture. Also, a fun fact is that most psyllium husk powder turns keto bread purple-blue in color!
  • Flaxseed meal – flax seed meal is a seed-based keto flour with a high amount of fiber and fat. As a result, it adds elasticity to the bread but can also make it gummy. That is why flaxseed meal is always used in small amounts, in keto bread recipes, and always in combination with almond flour or coconut flour.   • Chia seeds – some keto bread loaves use chia seeds to replace or decrease the amount of egg in the recipe. In fact, chia seeds are high in fiber, and they have the power to bind flours the same way eggs do. Since they also contain a good amount of fat, they compensate for the absence of egg yolks. As a result, chia seeds are often seen in keto bread recipes to decrease the number of egg yolks or whole eggs and reduce the eggy flavor of the bread.
  • Sunflower seed flour or pumpkin seed flour – these flours are great substitutes for almond flour to create nut-free keto bread recipes. They can often be used in similar volumes as almond flour to replace nuts in keto bread recipes.

Keto baking: fat and oils

Butter, olive oil, and coconut oil are the most popular fat used in keto bread recipes. However, the choice of fat impacts bread texture.

  • Butter – melted butter in bread recipes results in a cakey texture. Therefore, it is better to use melted butter to grease a loaf pan or bake sweet keto bread like this this keto blueberry bread.
  • Olive oil – the best oil to add a regular bread flavor to bread is olive oil. Plus, olive oil is high in healthy monosaturated fat, good for your health. If you are not a fan of the olive oil flavor, pick a light olive oil, you can barely detect the flavor.
  • Coconut oil – the best part of coconut oil in keto baking is the addition of MCT oil, naturally present in coconut oil. In fact, MCT oil, also known as medium-chain triglyceride oil, boosts fat burning on a keto diet. There are two types of coconut oil you can choose from: refined or unrefined. Note that refined coconut oil has no coconut flavor.

Low-carb bread-raising agent

Most low-carb bread recipes are gluten-free. Gluten is a protein that usually raises bread when activated with a wet ingredient and when in contact with yeast.

Since keto bread does not contain gluten, other ingredients are used to raise the bread.

  • Baking soda and baking powder – can be used in combination or on their own. Baking powder is not always gluten-free so if you are gluten intolerant, replace the baking powder with half the amount of baking soda in your keto bread recipe. In fact, baking soda is basically 50% of the active ingredients of baking powder, and they can be swapped by a 1:1/2 ratio in most baking recipes.
  • Apple cider vinegar – the purpose of apple cider vinegar in keto bread recipes is to activate the baking soda. In fact, baking soda requires an acidic ingredient to raise. That is why apple cider vinegar is often used in combination with baking soda. Other ingredients that can replace apple cider vinegar in keto bread are lemon juice or white vinegar.

Other ingredients

There are a few other ingredients that can be seen in an easy keto bread recipe:

  • Vital wheat gluten – it is basically 100% gluten without the starch, and it adds elasticity to keto flours and airy texture to keto bread. Vital wheat gluten is a convenient keto ingredient to mimic the wheat-bread texture, and add chewiness and texture to the final product. However, it is rare to see a keto recipe using vital wheat gluten since most keto recipes are gluten-free.
  • Whipped egg whites – some keto bread loaves use whipped egg whites to add air and make bread less dense. In fact, whipped egg whites are fluffy, and if added gently to keto bread batter, it can prevent dense bread.
    Wheat protein – like vital wheat gluten, wheat protein is used to replace gluten in keto bread. Since gluten is a protein, adding more protein to a keto bread recipe enhances your chance to mimic regular bread texture.
